Recipes completely gluten free

If anyone has recipes they want to share, I would greatly appreciate it. My brother has celiac sprue, and a lot of the recipes I've found lately that claim to be gluten-free are only wheat free... frustrating. I am going to make him up a cookbook as his Christmas gift, so anything you want to give, I'd love it... Thank you

    Hi there!
    I just made something up that was sooooooo easy and soooooo yummy. I was missing my "H Salt Fish and Chips", so I made something similar. In case you don't have an H Salt near you, it's just a english style fish and chips place, but it's really good because the batter is really crispy and fluffy.
    I got my Bette Hagman's 4 flour blend GF flour mix, one egg and ice cold water and made a modified GF tempura mix for fish. You use one egg and one cup each of GF flour and ice water. I whipped the egg first on the highest setting of my mixer, then I slowly added the flour then the ice water. Then just to be safe, I also added one teaspoon of xanthan gum. I let this batter sit for about 5 minutes, then I coated my paper thin sole filets in it and fried them up in a pat of butter (for flavor) and very hot oil. Sooooooooo yummy that EVERYONE in my family had thirds.

    Go Mexican, with corn tortillas, and stick with rice flour. Sushi, without the soy sauce or fake crab. Any regular recipe can be made with a rice flour substitute. Best thing is, to just think about giving up the baked goods and pasta as much as possible, and going more raw- fruits, veggies, lean meats. Better that way for anyone, really!

      Regarding soy sauce, there is a wheat-free tamari that stands in as a fine substitute.

        Here is a good one from GLUTENFREEDA

        Grilled Artichokes
        Difficulty: Easy
        Makes 4 servings

        Ingredients:

        2 large artichokes

        Juice of 1 lemon, divided

        3 garlic cloves, minced

        3 Tablespoons extra virgin olive oil

        Salt and freshly ground black pepper
        Optional dipping sauce:

        1 small shallot, minced

        1 Tablespoon capers, drained and rinsed

        1/2 cup mayonnaise

        1/4 teaspoon fresh lemon juice

        Salt and freshly ground black pepper
        Directions:

        For the artichokes:
        Slice the tops off of the artichokes and trim off the thorny tips. Fill a large pot with about 2 inches of water along with 1 tablespoon salt and the juice of 1/2 lemon. Bring to a boil. Add the artichokes; cover and steam until the artichoke bottoms pierce easily with a fork, about 20-40 minutes. Drain the artichokes. When cool enough to handle, cut the arthichokes in half, lengthwise and scrape out the fuzzy center.

        Prepare a grill.

        In a small bowl, stir together the juice of 1/2 lemon, garlic, and olive oil. Season with salt and freshly ground black pepper. Brush the artichokes with the garlic-oil mixture and set cut-side down, on a grill over medium heat. Grill, turning once, until lightly browned, about 10 minutes total.

        For the dipping sauce:
        Place the shallots, capers, mayonnaise and lemon juice in a small bowl and stir to combine. Season to taste with salt and freshly ground black pepper

    I use a lot of the South Beach Diet phase 1 recipes, without the artificial sweetners, (as that stuff is horrible and is not good for people with intestinal issues). South Beach recipes translate very easily to GF, and tend to be tasty, easy and really healthy. I have all the cookbooks, and use them often. Don't really do the diet itself, just use the books.
