I was sitting here munching on my rice crackers, hummus and cheese when I thought it might be fun to exchange some gluten free lunch ideas. I love leftovers from dinner, but when that isn't available... I like hummus with veggie sticks and crackers, Amy's canned lentil soup, fantastic brand black bean and split pea cup-a-soups, Thai Kitchen instant noodle soups, yogurt, nuts, the occasional Amy's frozen meal (I like the cheese enchiladas), greek salad with garbanzo beans, baked tofu with rice, nori rolls with GF tamari. I'm a vegetarian..as you might have gathered.. What great ideas have you come up with for the midday portable GF feast?

Tue, October 2, 2007 - 4:22 PMI get the big giant thing of baby spinach from Costco and I eat all different kinds of salads all week. One day I'll put tuna over my spinach, the next it will be beets and cinnamon pecans with goat cheese....
So, I basically eat a different kind of salad everyday.
I have also gotten very creative with what constitutes a "salad" too. Any meal I would eat just goes over the baby spinach. One of my favorites is a BLT salad with bacon bits (also from costco), grated cheese and tomatoes.
I've really tried to cut out as much bread from my diet as possible, mostly because I can't eat "real" bread anymore but also because the GF bread is so fattening. -

Fri, October 5, 2007 - 9:56 PMThe GF bread from the whole foods gluten-free bakery isn't too bad. off the top of my head I can't vouche for the nutritional aspect, but it tastes pretty good. Their GF hamburger buns are pretty tasty.
If you don't have these items in your local WF, then you'll have to make a request at customer service and they'll carry it. -
